Red Wines

  • 2021 Chambourcin
    Fermented via carbonic maceration, this vintage is quite different from most Chambourcin wines. Extraordinarily fruitful with light tannin in a medium/full-body. Slightly sweet on the palate with blackberries and cherries taking center stage. Serve with goat cheese, lamb, Thanksgiving turkey, or chocolate cake.

  • 2020 Maréchal Foch
    Smooth with a medium-full body all around. Hints of orange zest balance the blackberry, plum, and just-enough-tannin. We suggest serving with pasta bolognese or any grilled red meat.

  • 2017 Proprietor’s Reserve
    A blend of Zweigelt, Chambourcin, Chelois and Maréchal Foch. Medium body with lovely notes of dark chocolate and blackberry. Serve with steak, vegetarian meals, or turkey. To really bring out the dark chocolate, we recommend decanting at least 2 hours before serving.

  • Stay Sail Red
    A blend of the 2016 vintages of Chambourcin, Pinot Noir, and Maréchal Foch, Zweigelt, and Chelois grapes. Rich plum flavors and aromas are accompanied by mouth-filling tannins. We strongly recommend decanting this wine several hours prior to serving.

  • 2020 Pinot Noir – Aged 3 1/2 years in neutral oak
    This notably rich Pinot Noir has an earthy aroma with characteristic hints of cigars and leather. Light and smooth on the front of your palate, with a slightly sharp finish that will smooth out as it further ages. Pairs well with roasted poultry or fruit and cheese hor d’ouevres.

Rosé Wines

  • Clos Frontenac
    Semi-sweet rosé from free-run juice of Chambourcin grapes. We find soft peach and bright cherry notes in this remarkably dark rosé. Complements roast turkey and pork.

  • Stay Sail Rosé
    100% whole-cluster pressed Chambourcin. Barrel fermented and aged for 18 months. Crisp, with each sip being a different chapter of red fruit flavors of cherry, raspberry, strawberry, and cranberry.  Hints of tannin also show up here and there. Perfect dry aperitif on a hot day or sip with spicy hors d’oeuvres.

White Wines

  • Stay Sail White
    A blend of our 2015 and 2016 Vignoles, Seyval and Riesling. This has developed some of the petrol notes you find in older dry Rieslings. Medium body. Serve with vegetarian dishes or grilled fish.

  • 2019 Seyval
    Very crisp with hints of lime citrus. Similar body to Pinot Gris. Delicate floral notes. Perfectly refreshing for a hot summer day.

  • 2016/17 Chardonnay
    Un-oaked. Aromas of lime, and vanilla accompany very light notes of butter on the palate. Crystal clear in the glass. Clean finish. Enjoy with pasta and clam sauce, or salmon.

  • 2019 Riesling
    Bone dry Alsatian style, but slightly more mellow than your typical dry German Riesling. Serve with sushi, cheese fondue, or fish.

  • Blanc de Blancs Select
    Hints of apricots, peaches, and honey – this will pair well with bbq chicken or grilled fish.

  • Field Blend White II
    Smooth all the way through, full of fruit with a hint of citrus and peaches for a nice balance. This is a field blend of Traminette and Vignoles. Serve with poultry, fish, or simply sip before dinner.
