Stay Sail

Stay Sail welcomes visitors from all over the world to Frontenac Point. See it in action!
Stay Sail is our 10-foot-tall, kinetic sound sculpture created by world-renowned Canadian sculptor Don Dickson. Stay Sail sits on the bow of the winery deck overlooking the vineyard and Cayuga Lake. The sound is wind-driven.

Stay Sail Wines

The Stay Sail sculpture inspired three specific wines in 2005: a red, rosé, and white. Since people ask, "What is your favorite wine?", Jim created three that he especially enjoys. All are dry: 0% residual sugar.

Because Stay Sail Red and White are blends of grapes and sometimes vintages with similar brix and acid content, Jim can maintain the desired attributes from bottling to bottling. There are always limited bottlings of these wines.

The Rosé is 100% whole-cluster-pressed Chambourcin grapes to obtain a slight color and tannin. This wine is especially good with certain foods such as spicy Thai or Salad Niçoise.

The Red is always Chambourcin blended with another of the four red grapes we grow on the estate.

Jim creates the White to have a full body. Since the Stay Sail White is seldom made from a single variety, he can blend wines to maintain the Stay Sail White taste and style. It is currently sold out, but a new bottling will be released in 2018.
